Juwari Soba // 100% Buckwheat Noodles
"Juwari soba" is a type of Japanese soba (buckwheat noodles) made entirely from 100% buckwheat flour. The name "juwari" means "100%" in Japanese, referring to the absence of wheat or other flours typically used to bind the noodles. This gives juwari soba a distinctive flavor and a more delicate texture compared to other soba varieties, making it more challenging to produce. It’s often enjoyed cold with dipping sauce or served hot in broth.
To make juwari soba, you need freshly milled buckwheat flour, ground to the right fineness using a stone mill. It can be quite difficult to obtain this kind of buckwheat flour outside of Japan. If you want to try making soba at home, I recommend replacing 20-30% of the buckwheat flour with wheat flour. In fact, most soba restaurants in Japan mix wheat flour into their soba dough as well.
